Mango Chutney Glazed Salmon

Today’s recipe is a bit of a “ready-made condiment meets from-scratch cooking” and honestly, when these little experiments work out, those are my favourite moments. This is delicious!

My partner grabbed dinner and went into a different room as he was busy with work when I’d made this. He honestly came out again, running towards the kitchen, having already finished a plate of this before I’d had time to eat mine! “What is this?? It is delicious!!” - To me, that kind of reaction is the absolute win. That’s when I knew this had to be a TFSB recipe. I used some ready-made mango chutney I had in the fridge, but feel free to make your own, of course!

Mango Chutney Glazed Salmon

For 2 people

Time: Prep 10 mins | Cooking 15 mins

  • 4 small or 2 large salmon fillets

  • Half a jar of mango chutney

  • 1tsp honey

  • 3 tbsp soy sauce

  • A splash of sriracha sauce (for a kick, optional but recommended - Tabasco or similar works too)

  • 2 tbsp lemon juice

  • 1 tbsp mustard (whatever kind you’ve got!)

  • A handful of chopped cashews

  • 1 tbsp sesame seeds

  • 1 spring onion

  • A handful of chopped coriander

  • Side dish of your choice (I had it with quinoa and edamame beans!)

Instructions

Preheat the oven to 200ºC. In a bowl, mix together mango chutney, honey, soy sauce, sriracha, lemon juice and mustard. Cover the salmon fillets with the glaze.

Cover a (small, if you have it) baking tray in foil, and brush it with olive oil. Put it over a large hob on high heat until the oil sizzles a bit. Place the salmon on top, skin down - this helps crisp up the skin, yum! After about 1 minute, place the salmon in the oven and cook for 10-15 minutes until the salmon is cooked through. When the fish starts to look done, with about 3-5 minutes to go, pop some cashews and sesame seeds over the fillets.

Serve with your side dish of choice, and chop up some spring onion and coriander to top it with. A mouthwatering mix of flavours!
