Banana pancakes
You just change one thing.
Whether you just want a bit of a change one morning, you have a very ripe banana that needs using or you’ve run out of bread - a banana and two eggs is essentially all you need for this pretend-naughty breakfast. They cook quickly and leave the kitchen smelling so nice. Serve with blueberries as a light option or other pancake toppings of your choice.
Banana pancakes:
For 2 people
Ingredients:
1 banana
2 eggs
Alternatively: a tablespoon of flaxseed (can skip)
A dash of butter or vegetable oil
Other options to add: poppy seeds, sweet flavoured protein powder
Toppings: Berries, syrup, honey, yoghurt, bacon, chocolate chips, apples…
In a small bowl, mash the banana using a fork. Mix in the two eggs. You can also use a hand mixer for this to really get it mixed well, but a fork and some great wrist action does the trick just fine! The mix will be fairly thin, but don’t worry - the two eggs bind it together in the pan. You can mix in a tablespoon or so of flaxseeds, as it thickens it up and also adds nutrition. I also love putting in a bit of vanilla flavoured protein powder! Some poppy seeds will add lovely texture and nutrition too, but these are all alternatives.
Heat up a frying pan and use a bit of butter (or oil) to avoid the pancakes sticking to the pan. You don’t need loads, just a thin layer. Have the pan at quite high heat at the start, so when you pour in a bit of the mix it stays in place, and then you can turn the heat down to cook the pancakes.
Make small pancakes, roughly the size of the back of your hand. I use a 1/3 measuring cup to pour them out. If you pour from above, quickly and confidently, they will look lovely and round (but it’s not really important, they taste the same regardless of shape!). Be patient before you turn them as they take a second to solidify, but also keep an eye on them so they don’t burn. Sine they are small they are fairly easy to flip with a spatula!
Serve immediately with your choice of toppings and a hot drink. You can not have a bad day after this breakfast.
