Oat Biscuits - The From Scratch Body

I suddenly had a nostalgic moment where I remembered making oat biscuits as a child and taking them with us on walks in the woods. So I messaged my mum who sent me a photo of her original recipe!

Wholesome snacks.

I’m giving you a few options here, you can make these quite sweet and just super tasty on their own, or slightly healthier and good as a base for a bit of cheese. Enjoy one of my favourite snacks from childhood!

Oat Biscuits

Time: Prepare: 10 mins | Cook: 10 mins

  • 250 ml single cream (1 generous cup) - a healthier version here is milk or oat milk (I’ve tried the latter), it’s just not as sweet but still nice!

  • 1-2 cups of wholemeal flour (you can go totally oat heavy here and use oat flour, or even mix if up with a nut flour)

  • 1 cup oats

  • 1 tsp baking powder

  • A pinch of salt

Instructions

Preheat the oven to about 220ºC (428ºF).

Mix the dry ingredients together (start with 1 cup of flour and see how much you need) and fold in the cream. Add more flour if needed, you want this to be a dough that you can roll thin on the kitchen top with a rolling pin without sticking too much, but also not too dry or solid.

When you’ve rolled the dough out, use the top of a narrow glass to make roundly shaped biscuits and transfer them to a baking tray covered in baking paper.

Cook for 10 minutes in the oven and let cool on a wire cooling rack and then tuck in!
