Pasta and Steak Strips with Spinach

A super simple, quick and comforting meal that will leave you feeling fantastic, with no guilt! And your iron levels will be like POWWW!!!

Steak can be quite expensive.

…But it is really tasty and can offer some much needed iron when your energy levels are low. If you are craving steak but find that one per person is a bit too much for this week’s budget, try this really simple, comforting pasta and steak dish, and let the spinach help fill you up! One steak for two people will be enough here. This is a really quick one too, so if you are desperate to get dinner on the table, it’s a great option.

Pasta and Steak Strips with Spinach

For 2 people

Ingredients

  • 1 cup of dry fusilli (or other type) pasta (go whole wheat for healthier version!)

  • 1 cup of raw spinach

  • 1 fillet steak

  • Salt and pepper

  • 1 1/2 tbsp extra virgin olive oil

Optional additions:

  • A handful of mushrooms

  • Some parmesan to sprinkle on top

  • Some dried herbs to taste (oregano or an Italian herb mix)

Instructions

Get the fillet steak out of the fridge in good time before you prepare this, for it to come to room temperature (30 - 60 mins before if you have time). Open the packet and rub a little bit of salt and pepper on each side.

Get your pasta cooking here, get the water boiling with a pinch of salt in it and get the pasta in, keep an eye on the time and cook according to the package. If you are cooking fresh pasta, it takes less time, in which case you can wait until you’ve cooked the steak.

In a deep frying pan/skillet, heat up some olive oil on fairly high heat. Turn the heat down a bit, fry the steak in the pan for a couple of minutes on each side, make sure every bit of the outside is cooked, but not burnt! Take the steak out of the pan, set it aside on a chopping board to rest.

Drain the cooked pasta (it’s nice if it’s still a tiny bit wet so don’t be too thorough!) and pop it right in the pan that you cooked the steak in. Mix the pasta well with the juices left in the pan from the steak, this gives the pasta a gorgeous flavour! Keep the pan on absolute minimum heat, just to keep it gentle and warm.

Take the raw spinach and mix it in with the pasta - drizzle over a good bit of olive oil and mix it all together!

Cut the steak in to small strips and place on top - you can do this after you’ve placed the pasta mix on plates, if you like. It looks so tasty and appetising!

For my optional additions: the mushrooms you can cut in to slices and fry gently alongside the steak, and just leave in when you take the steak out to rest. You can season with some herbs if you want, but the steak is very flavourful normally so even just salt and pepper is great. Some parmesan drizzled on top is lovely with the pasta, but again, not a must!
