Low Carb Oven Chips (with Swede)
Cheap, easy and healthy.
As I’m writing this, a large swede at my local supermarket costs 80 pence. That’s enough to make chips for 2 people - so this is not just a super healthy alternative, but incredibly cheap too! This is a great low carb alternative to potato chips, containing about half the amount of carbohydrates to a regular potato. And it’s SO tasty!
Low Carb Oven Chips (with Swede)
For 2 people
Time: Prep 5 mins | Cook time 20 mins
2 tbsp oil
1 large rutabaga (swede)
Salt and pepper and seasoning of your choice: smoked paprika is recommended, or some Everyday Spice or chilli powder
Alternative (recommended!): 1 onion
Instructions
This really couldn’t be easier. Preheat the oven to about 220ºC (430ºF), and put a baking paper on a baking tray. With a knife, carefully peel off the outer skin of the swede and then cut it into a chip size that suits you. Be careful with the knife as raw swede is pretty hard, so it can be a bit harder to be in control than with a regular potato, for example.
Place the chips on the baking tray and drizzle olive oil evenly over them. If you are adding an onion, slice it up and spread it across the baking tray with the chips. Then sprinkle salt (I recommend sea salt) and pepper, and other seasoning that you might like over the chips and mix everything well (ideally with your hands). Place in the middle of the oven and cook for at least 20 minutes (turn halfway through), test one chip to see if it’s done to your liking - every oven is different.
That’s all - that’s the swede!
Serve with chicken, as a side to a burger or… anything you’d have regular potato chips with, basically!
