Curry Flavoured Turkey Skewers
Turkey isn’t just for Christmas.
I cook with turkey all year round - I love the meat, it’s high in protein and super flavourful, and simple to cook with! In normal shops you can get turkey breasts, thighs, whole turkey and turkey mince - try it out on your next shop and swap your chicken out for it! It takes a tiny bit longer to cook but the meat is gorgeous.

Curry Flavoured Turkey Skewers
Makes 4 packed skewers! (Fits 2 people)
Ingredients
400 g turkey, fairly large chunks
1 small courgette, thick slices
1/2 onion, quartered and separated
1/2 red onion, quartered and separated
About 12 cherry tomatoes
1/2 red, green or yellow pepper, quartered and separated
1-2 tbsp fruit jam (apricot or peach is perfect!)
1-2 tbsp curry powder (or mix together your own curry powder mix!)
Salt and pepper
1 tsp lime
Handful of coriander
You also need:
A side dish (I often have rice, but a fresh salad, potatoes, couscous or bulgur wheat are some other options!) - make sure that you keep in mind how long your side dish will take, and whether you need to prepare it before the skewers.
Instructions
In a large bowl, add turkey, vegetables, jam, curry powder, and seasoning. Mix it all really well so everything is covered by the sticky jam and seasoning. Squeeze lime juice over and mix well.
Preheat the oven to 200ºC (220º if non fan assisted, 428ºF).
Place tin foil on an oven rack. Take 4 long skewers (if they are wooden, it’s a good idea to soak them in ice cold water first so they don’t heat up so quickly in the oven!), and thread on meat and vegetables, alternating between each ingredient (turkey, tomato, courgette, red onion, onion, pepper, turkey, tomato and so on…). This takes a weird amount of brain power for me, ha! With all 4 skewers packed full of goodness, pour any remaining mix/juice from the bowl over the skewers.
Change your oven setting from normal to grill (it gets hot up top and that’s what we want now!).
Put the oven rack in and grill the skewers for 15-20 minutes.
While the turkey is in the oven, you can prepare your chosen side dish!
The skewers will need to be turned, so take them out occasionally and make sure you’ve properly grilled each side. If you are unsure if they’re done, take the biggest turkey chunk you can find and cut it open, if it’s cooked through (not pink inside), you’re good to go. You can also use a meat thermometer and check that the meat is over 74ºC (165ºF) inside.
Sprinkle some coriander on top, and squeeze more lime over if you wish. Enjoy your new go-to dinner favourite! Great with some yoghurt on the side too.
PS: You can choose tons of different options for the vegetables with these skewers. In the video I did on my YouTube channel, you will see that I use apples (!), it’s super tasty! You can also add some pineapples, sweet potato might be nice too? Any other ideas are most welcome, so do share!
PS PS: You can of course make these with chicken too! Just keep in mind that chicken cooks a little bit quicker than turkey.
