Viral Doner Kebab in food processor

I tried the viral “doner kebab” recipe and absolutely loved it - but I honestly don’t get crazy about digging my hands into raw meat to mix it myself, especially as I now constantly have a tiny munchkin getting involved in the cooking, or demanding a snack or a nose wipe just as I’m knee deep in dinner. So I thought - surely, this will work brilliantly in a food processor? And let me tell you, I’m here to make your kebab night very easy and enjoyable.

Because boy, does it work.

Top tip: Sneak in some flatbread in the same bowl first to minimise clean up even more!

I don’t find myself getting lamb mince very often, or lamb of any kind to be honest, as it’s not necessarily my favourite. But with the right spices - and the right recipe in general - it can be so lovely! Many of the versions of this viral doner kebab recipe that I have seen around use beef mince, but I’ve gone for lamb here and really recommend it. It’s less expensive than beef usually and it’s slightly more sustainable too (although still up there, so this is not one we want to make every week, for sure).

I used my flatbread recipe here and mixed it in the food processor first - and though I thoroughly scraped out the dough and any bits left on the sides, I didn’t bother to clean it before then doing the meat in there (which will cook in the oven anyway). So this is a super easy and lazy way of getting both of these done with just one bit of clean up!

I love my Magimix food processor as many of you know, but this is honestly not a way for me to try and get you to buy one for my benefit. This is a relatively easy mix to do for any food processor, so even if yours is not the most powerful it’ll almost certainly do the job!

“Doner” Kebab in the food processor

2-4 servings

  • 500g lamb mince

  • 1 onion

  • 2 cloves garlic (or more if you prefer)

  • 1 tbsp tomato puree

  • 2 tbsp Greek yoghurt

  • 1 tsp ground cumin

  • 1 tsp smoked paprika

  • A pinch of red pepper flakes

  • 1/2 tsp salt

  • 1 tsp black pepper

To serve with:

  • Tomatoes

  • Gherkins

  • Raw onion

  • Peppers

  • Hot sauce

  • Flatbread

You also need:

  • A food processor

  • A baking tray & oven

  • Baking paper (individual sheets easiest!)

Preheat your oven to 200ºC (400ºF).

If you have a smaller bowl, mix the onion and garlic to a pulp. You can do it in a big bowl too, but may need to stop more often to scrape down the sides! Add it in to your biggest bowl, then add everything else on the main ingredient list. Mix until it all looks really well mixed, but don’t keep going for too long. You want the mix to stay firm.

Grab one baking sheet and put 1/3 of the mix in the middle. Put another baking sheet on top and roll the mix out so it is flat and even and covering most of the baking sheet. You want it quite thin, like the thickness of a wrap. Take the baking sheet and fold it over from the short side in 2 inch increments until fully folded in on itself. Repeat 2 more times with the rest of the mix.

Bake in the oven for about 20 minutes (a great time to chop up veg and also to make your flatbread in a pan!), then set the oven to grill and take the meat out of the baking paper. Tear the meat up a bit with tongs or your hands, and put it back in under the grill for no more than 5 minutes, I’d say.

I serve this family style with the meat in one bowl, flatbread in another and the added veg in a third, with some hot sauce choices and some yoghurt available as well, this way everyone can make it the way they want! Many of the kebab recipes I see add some veg in the oven with the meat, so by all means do that, but I like adding raw veg (tomato, onion etc).
