Creamy Calorific Soup

Calorific is great! This soup is just a guide, there’s lots of room to play here with whatever you’ve got!

Calorific is a good thing!

Soup can be a really substantial meal - and with this recipe, containing lovely, fibre rich vegetables as well as nuts and coconut, this is a great one for when you actually need to fill up. Perfect to take on a camping trip (if you have a safe way to transport it!)

This is only a suggestion from me - you can take inspiration from this and choose any vegetables you like and have. In terms of the nuts though, I really recommend cashew, as they get so creamy and lovely in a soup.

Creamy Calorific Soup

For 4 people

Prep time: 10 minutes | Cook time: 30 minutes

  • 1 onion

  • 2 medium sized root veg (carrot, parsnip, celeriac, swede…)

  • Leftover veg (like broccoli stem, leftover asparagus, kale etc)

  • 1 cup of nuts, cashew nuts highly recommended

  • 1 small carton of coconut cream/half a tin of coconut milk (cream definitely recommended!)

  • 1/2 stock pot (or homemade stock!)

  • 2 cups of water

  • Salt and pepper

  • Turmeric

  • A pinch of chilli powder

  • Optional: coriander or parsley (garnsih), croutons, crispy fried onions

I made this in my Magimix Cook Expert, which was amazing as it helped me really mix everything and make it fully creamy without having to work hard. You can check that out here. If you don’t have a Cook Expert or something similar, that is totally fine! Anyone can make soup with a hob and a saucepan. You can also make great soup easily with a pressure cooker like and Instant Pot, for example.

If you are making it in a saucepan, add the water and stock first. Then chop up the vegetables roughly and add everything in, and add cashew nuts. Let it simmer for about 30 minutes on medium heat, add more water as you go along if you need to, and add the coconut cream/milk about halfway through. Add in the seasoning. When everything is broken up and really mushy, get a hand mixer and run it in the soup until it goes really nice and creamy (or leave some chunks in if you prefer that).

Top with some coriander or parsley and maybe pop in some croutons or crispy onions, and enjoy the most amazing - calorific - soup!
