Soup Tips - The From Scratch Body

Do you have a minute to talk about autumn’s lord and saviour, the soup?

Soup is like the smoothie of cold days.

Think about it; just like you can sneak in lots of vegetables and fruit and probiotic ingredients in a refreshing, tasting smoothie, you can load up on immune boosting green vegetables and proteins in a soup. With some very small tweaks you can get really excited about an autumn soup! Here are some of my tips on how to make your soup tasty, exciting and healthy:

  • A lovely, thick creamy soup is very tempting, but remember that there are much better ways to achieve this than adding cream, butter or milk. You can add a small amount of coconut cream or coconut milk, you can add ingredients that will thicken your soup in a natural way like butternut squash, chopped spinach, sweet potato or potato.

  • If you find that your creamy soup turned out a bit too thin, try to add some brown rice flour or similar instead of more artificial thickeners or gluten heavy flours.

  • If you have made homemade stock (you can check out my YouTube video on this!), this is the perfect thing to add to your soups for flavour. If you make chicken stock, you will be adding some collagen to your soup too by using the stock, which is healthy and thickens it! If you don’t have homemade, you can of course add a stock pot, but be aware that these are quite salty so you might not need to add much more salt on top of this.

  • Always save leftover bits like half an onion, broccoli stems, cauliflower leaves and less pretty looking carrots. They make for a tasty soup!

  • Remember that herbs add lots of flavour, you don’t just have to go for salt and pepper. And they are healthier too!

  • Give your soup time to really soak up all the flavours.

  • If you are unsure how much water to use, you can always add more, but it’s hard to take out some without losing flavour!

  • If you have a tiny bit of leftover meat or tofu in your fridge that won’t quite make a whole meal on its own, this is the perfect thing to add to a soup for a bit of texture.

  • Some croutons dropped in right before serving can really add that crunch to make the soup more exciting. A bit of bread or baguette on the side is of course also lovely!

  • Some chopped parsley or coriander on top will add lots of lovely flavour and scent!

Don’t forget about soups. They are surprisingly filling and can taste absolutely amazing. I love using leftovers for soup, it means that my soups never taste exactly the same, as I always just use what I have.
