Creamy Green Soup - The From Scratch Body

This deep green, super smooth and creamy soup tastes beyond delicious, and is easy and cheap to make.

This will give you a serious boost!

Mood boost, immune boost, heat boost… Honestly you will love this creamy, vegan soup packed with flavour and healthy ingredients.

This is only a suggestion from me - one of my favourite soups - but you can take inspiration from this and go any direction with it you like. Of course!

Creamy Green Soup

For 4 people

Prep time: 10 minutes | Cook time: 30 minutes

  • 1 onion

  • 2 medium sized carrots

  • 1/2 romanesco cauliflower (or regular cauliflower), including leaves

    (or broccoli, including stem)

  • 1 large handful of spinach

  • 1 small carton of coconut cream/half a tin of coconut milk

  • 1/2 stock pot (or homemade stock!)

  • 2 cups of water (possibly more needed)

  • Salt and pepper

  • Herbs and other seasoning of your choice (I recommend a little bit of ginger or chilli to give it a bit of a kick!)

  • Optional: coriander (for garnsih) and croutons

Instructions

I made this in my Magimix Cook Expert, which was amazing as it helped me really mix everything and make it fully creamy without having to work hard. You can check that out here. If you don’t have a Cook Expert or something similar, that is totally fine! Anyone can make soup with a hob and a saucepan. You can also make great soup easily with a pressure cooker like and Instant Pot, for example.

If you are making it in a saucepan, add the water and stock first. Then chop up the vegetables roughly and add everything in. Let it simmer for about 30 minutes on medium heat, add water as you go along if you need to, and add the coconut cream/milk about halfway through. Add in your chosen seasoning. When everything is broken up and really mushy, get a masher and really break everything up as much as you can. Get a whisk or wooden spoon and mix everything as much as you can.

If you really want to mix it well and make it properly creamy, you can make the soup beforehand and let it cool down - then mix the cold mix in a food processor. This way you will get the benefits of all the vegetables having gone soft in the pan, which of course makes it easier to mix. But you should be able to get a great, creamy result by hand too!

Top with some coriander and maybe pop in some croutons, and enjoy the most amazing green soup!
