Truly Healthy Vegan Muffins - The From Scratch Body

Chia seeds as a binder, bananas for sweetness and cinnamon, cardamom and lemon zest giving you all the flavours. These are truly healthy!

I didn’t trick you here.

The amount of times I’ve googled something like “healthy breakfast muffins”, “healthy pancakes” or similar - and found tons of recipes - only to skim through the recipe and see something like “150g white sugar”… I’m like, no. Listen, there is nothing wrong with making and/or eating muffins made with sugar, chuck in chocolate chips, do whatever you want! But I want to make something that is so nice and gentle on my body that I can have it as a part of breakfast or as a snack without my blood sugar spiking and endo pain flaring up. That’s why I’ve called these truly healthy. See? Not a trick to get you here. I hope you feel good after eating these too!

Truly Healthy Muffins (Vegan)

Makes about 6

Time: Prep 5 mins | Cooking 20 mins

  • 2 cups of oat flour (you can just blitz some oats in a blender - voila: flour!) (regular flour or nut flour (like almond) works too!)

  • 2 medium sized/3 small bananas

  • 2 tbsp chia seeds, mixed with 1/2-1 cup of water

  • 1 tsp vanilla extract (optional, for extra sweetness)

  • 2 tsp baking powder

  • 1 tsp cinnamon

  • 1 tsp cardamom

  • 1 cup of milk alternative like almond, cashew or oat milk (or water)

  • 1/2-1 lemons worth of zest

  • Optional, but recommended: some blueberries (frozen ones work!), or other berries work too

You also need:

  • Muffin tray

  • Muffin liners

  • Oil/butter

Instructions

Preheat the oven to 180ºC. Mix the chia seeds and water well so the seeds soak properly and create a binding gel.

In a bowl, mash the bananas with a fork, add in the oat flour, baking powder, vanilla extract, milk alternative of your choice/water, soaked chia seeds, cinnamon, cardamom and zest and mix everything well together. At the end, add in some blueberries and mix them in gently.

Put 6 muffin liners in a muffin tray and brush/spray them with a bit of oil.

Fill the liners two thirds of the way with muffin mix - you can drop in a few berries on top too, if you like.

Bake at 180ºC for 15-20 minutes, until a skewer comes out clean if you stick it into a muffin.
