Easy 1-7 Ingredient Guacamole
When you havocado, but not much else…
I’ll be honest, sometimes my main motivation for making guacamole is that I have an avocado that needs using and it feels like it might be a bit too soft for a salad. Those babies ripen fast! So on the topic of making a dish when you don’t have tons of ingredients (check out my blog post on this topic!), check out this 1-7 ingredient guacamole. Pick what you have and leave the rest! You do need an avocado, though. Unless you’re a sorcerer.
Super simple 1-7 ingredient guacamole:
For 2 people
Ingredients:
1 large, ripe avocado
A pinch of salt and pepper
1 tbsb olive oil
1 tsp lime juice
1 small handful of coriander (cilantro)
1/2 small red onion, roughly chopped
A dollop of creme fraiche or natural yoghurt
The avocado is the only must! That’s your 1 ingredient. Then, add as many of the following as you please!
This could not be simpler. Peel and pit the avocado, I recommend getting an avocado cutter to keep things easy and keep your fingers safe. In a food processor (see next paragraph if you don’t have one!), add avocado and other ingredients you want, in. You don’t need to chop the coriander and you can just chuck in roughly chopped onion, as the processor will do that work for you! The creme fraiche is lovely to help keep the nice, light green colour and creamy texture. Blast for a few seconds, depending on how chunky or smooth you want it, and voila! The longer you run it, the runnier the guacamole will be, so keep that in mind.
You can totally make this without a food processor too, and it actually gives it a lovely, chunky texture so some might argue it’s the better option! In a bowl, put the ingredients in, if you are adding red onion or coriander, chop them finely first. Mash down the avocado with a fork and mix it all well. And there you go! Perfect on top of my cauliflower tacos!
