Green Pancakes

You know I love me some coloured food! Let’s do bright green pancakes today. You don’t need any strange ingredients, raw spinach does the trick!

Green means go.

Can you start your day better than with a big ol’ bunch of GREEN on your plate? That actually tastes super nice and is nothing but nutritious? A bit of colour is so fun in food - and it feels good knowing that the colour element is also offering lots of fantastic health benefits, as it comes from raw spinach. Raw spinach adds virtually no flavour to the mix, so you can rest assured that you get a familiar pancake taste, just in a new outfit. If you have a blender or a food processor, you can make this in minutes.

Green Pancakes

Generous portions for 2 people (though I totally finished all of these myself)

Time: Mixing: 5 mins | Cooking: 5 mins | Total time: 10 mins

  • 1 banana

  • 1 spinach

  • 1 cup all purpose flour (about 160g)

  • 1 egg

  • 3/4 cup (180ml/160g) milk (any milk you like, dairy, nut or oat)

  • 1 tsp bicarbonate of soda (baking soda)

  • 1/2 tsp cardamom (optional)

  • As an option, you can add some vanilla flavoured protein powder (perfect if you need to make it less runny + sweeter)

Add all the ingredients in a blender (make sure to rinse your raw spinach) and mix for a minute or so in a blender. You can store in the fridge or freezer until you want to use them, or go straight ahead and make them of course!

In a large frying pan, melt some butter (or use cooking oil like coconut or vegetable oil) - make sure the heat is not up too high, as this makes the pancakes go brown - remember we want to get as much of that lovely green colour to come out as possible!

Pour in a bit of the mix in little round shapes of about the size of your hand, and flip over after 30 seconds to a minute. Cook on both sides.

Top with berries, yoghurt, syrup, honey, sugar, lemon, bacon, pancetta, whatever you want!
