Perfect Pizza Base

I grew up having my mum’s delicious “bolognese style” pizza as a weekend treat - and one day I’ll do the recipe for that (with her permission), but I find myself using a version of her pizza base with all sorts of different toppings on a regular basis.
This pizza base is an absolute winner every time and really easy to get right!
I definitely recommend using your regular oven setting (rather than fan assisted) if you can for this pizza base, as this creates that really lovely crust on the pizza but doesn’t dry it out.
Perfect Pizza Base
Makes 2 medium sized bases
Prep time: 10 minutes | Rise: 30-60 minutes | Baking time: around 25 minutes
Ingredients
420g white (plain or bread) flour
2 tsp dry active yeast
A pinch of salt
1/4 cup (about 4 tbsp) olive oil
300 ml lukewarm water
Mix together flour, yeast and salt. Slowly mix in oil and water, until you get a nice, even dough. Cover with a towel or cling film and let rise for 1/2 hour to an hour.
Preheat the oven to 230ºC (450ºF).
Divide the dough into two parts and roll out onto two sheets of baking paper sprinkled with flour. Top with your choice of sauce, toppings (options are endless!) and cheese.
Bake in the oven for 20-25 minutes, if the two pizzas don’t fit on the same shelf in your oven, switch them round halfway through baking!
