Leftover Porridge Pancakes

I always make too much porridge! There are tons of great ways to use leftover porridge, but a really quick and insanely tasty one that I love is leftover porridge pancakes.

This is just a guide.

As we all make porridge slightly differently and the thickness and texture can really vary, you have to experiment a bit yourself here and find out what works. I often add a bit of chia seeds and flaxseeds to my porridge for example, both help binding - so already my mix is quite easy to get nice, firm-ish little pancakes from. Try some different approaches and find what works for you, using this as your guide!

Leftover Porridge (Oatmeal) Pancakes:

Makes about 6-8 small pancakes

Ingredients:

  • Roughly 300g leftover porridge

  • 1 banana

  • 1 egg

  • 1/3 cup milk (or kefir is really nice!)

  • 1/3 cup plain flour

  • A pinch of either cinnamon, cardamum or pumpkin spice mix (or a few vanilla seeds!) - can omit

  • If you don’t have this in your porridge already, consider adding some chia seeds (add early with the wet mix so they soften!) and/or flaxseeds

  • 1-2 tbsp of butter or vegetable oil

  • Toppings: Berries, syrup, honey, yoghurt, bacon, chocolate chips, apples…

In a small bowl, mash the banana using a fork. Mix in the egg and milk or kefir. Add the flour and any spices you’re using and mix well. Add your porridge and mix well. You want a batter that’s not too thick, but also binds well. Try one pancake first and see how it comes out and decide whether you want to add more of something!

Heat up a frying pan and use a bit of butter (or oil) to avoid the pancakes sticking to the pan. You don’t need loads, just a thin layer. Have the pan at quite high heat at the start, so when you pour in a bit of the mix it stays in place, and then you can turn the heat down to cook the pancakes.

Make small pancakes, roughly the size of the back of your hand. I use a 1/3 measuring cup to pour them out. These cook relatively quickly, so keep an eye on when they start solidifying and flip them over.

Serve immediately with your choice of toppings and a hot drink. You can not have a bad day after this breakfast.
