Aquafaba Pancakes

Using aquafaba and whisking it, we create a fluffy, tasty and simple pancake with super healthy ingredients!

The plant version of egg whites.

It’s so wonderful to have aquafaba, the plant version of egg whites basically, adding the creaminess and airy, fluffy texture to these pancakes. All the other ingredients are basic ingredients that you are likely to have or can easily get, which is exactly how I like it! There’s lots of room to play too, so you can make them slightly differently every time.

Aquafaba Pancakes

For 2 people

Ingredients:

  • Aquafaba (chickpea water) from one can of chickpeas

  • 1 teaspoon of cream of tartar

  • A few seeds of vanilla from a vanilla pod (alternatively a tiny dash of vanilla extract), optional

  • A pinch of ground cardamom (optional)

  • 2 bananas

  • 1 cup of oats

  • A generous dash of butter or vegetable oil

  • Optional addition: sweet flavoured protein powder or freeze dried berries.

  • Toppings: Berries, syrup, honey, yoghurt, bacon, chocolate chips, apples…

In a tall plastic jug or bowl with high sides (so it doesn’t splash), whisk together the aquafaba and cream of tartar until creamy and starting to form peaks (it doesn’t have to go completely stiff), add in the vanilla and/or cardamom if using.

Add the bananas and mix them in with an immersion blender until smooth. Add the oats, bit by bit, if you think you don’t need all of it then you can do a bit less than 1 cup. If adding any sweet flavoured protein powder, mix that in now too.

Heat up a pan and cover in butter or vegetable oil, start with high heat and bring it down a bit after the first few pancakes have gone in. Pour in the batter from the jug in pancakes the size of the palm of your hand (roughly) and cook until done on both sides!
