3 Bread Recipes
So simple!
So you want to make bread, but don’t quite know where to start? Here are 3 of my favourite flour/seed combinations that are still safe bets if you are new to bread baking, but that will turn out super tasty. These all make one large loaf or two small loaves of bread, or about 10 large bread rolls.
3 Bread Recipes
Makes 1 large/2 small loaves
Prep time: 10 minutes | Rising time: 2-3 hours | Proving time: 1-2 hours | Cook time: 30 minutes
Recipe 1: Playing It Safe
600g plain (wheat) flour
400g wholemeal flour
7g yeast
1/2 tsp salt
650ml water
50ml extra virgin olive oil (optional)
Recipe 2: Nuts And Seeds
500g plain (wheat flour)
300g wholemeal flour
100g flaxseeds
50g pumpkin seeds
50g sunflower seeds
7g yeast
1/2 tsp salt
650ml water
50ml extra virgin olive oil (optional)
Recipe 3: Oats And Berries
400g plain (wheat) flour
400g spelt flour
100g rolled oats
100g dried cranberries
7g yeast
1/2 tsp salt
650ml water
50ml extra virgin olive oil (optional)
Instructions for all 3
Mix all the dry ingredients together, then mix in some olive oil (if desired) and water. Keep mixing until you’ve got a fairly sticky, but firm dough. Knead for about 10 minutes, put back in the bowl and cover. Let rise for 2-3 hours, until the dough has doubled in size.
Take the dough out and shape into desired bread, either in to two small loaves in greased bread tins, one large dough in one large bread tin or several bread rolls on a sheet of baking paper. Cover again and let rise for another hour or two until they have doubled in size.
Preheat the oven to about 230ºC, 210ºC for fan assisted oven (about 450ºF). Cook a large loaf for about 35 minutes, two small ones for about 30 minutes, and bread rolls for about 25 minutes. It really depends on your oven.
Take the bread out and let rest on a wired cooling rack. Enjoy!
Note that these are just some suggestions to get you going. You can mix together flour, nuts and seeds that you have in a thousand different ways. I try to minimise my use of white plain flour, so I probably go a bit lower with that than the recipes above most of the time. But this is a great place to start, and you can start working out your own favourite bread recipe!
